Behold, the humble sweet potato.
Isn’t it beautiful? If you don’t agree, you’re about to. Why? because we’re making this into one of the most beautiful things known to mankind: toast! I never really got on the avocado toast train, but I am ALL about using slices of sweet potato like this. Don’t believe me? Check it out.
Sweet potato is sliced! You want it to be a little thinner than a normal slice of toast. Then into the toaster we go!
You’re going to have to run this through the toaster a few times, depending on the strength of your toaster. Once the sides begin to show a little brown, you’re good to go!
Next, we’re onto the exciting part: toppings! The possibilities are endless, but I went with two classics: a fried egg and peanut butter, banana, and some cinnamon.

Healthy: Replacing simple carbs with complex carbs keeps you fuller for longer, and sweet potato toast does just the trick.
Good: I seriously (I mean seriously!) loved this. Not just because I’m obsessed with sweet potatoes, but because this simple trick lends itself to so much variety. Breakfast sandwiches are definitely in my future with this one.
