Do you ever have a tendency to over-complicate things? It seems these days I can make anything from to-do lists to free time much more involved than it needs to be. I mean, it’s summer. The only thing we need to be stressing about is making sure our ice cream cones don’t melt all over our hands or get eaten by our dogs (not like I’m speaking from experience or anything…)
Today I’m bringing you a simple summer recipe. Nothing complicated. Just a few fresh, good-for-you ingredients that make a wholesome lunch or dinner. Let’s make salad!We start with simple greens—in my case, a blend of baby spinach and kale. Both are antioxidant-packed and a tasty base for our salad.Next, we’re adding our fruits and veggies! I chose cucumber for its summer coolness and strawberries for a hint of sweetness. If I had remembered to buy an avocado, you’d see it there as well.Next we’re onto our protein! Grilled chicken is a great standby—you can either make fresh or use pre-cooked frozen chicken. Salmon, turkey, or even lentils would be another good option!Finally, we’re onto our extras! Feta cheese and crushed pecans add the right amount of healthy fats and flavor to make this a meal-worthy salad. All that’s left is a simple balsamic dressing and it’s nosh time!Pretty. Simple. This salad is both. Eat up and remember that sometimes the best things in life are the easiest!
Easy Summer Chicken Salad (gf)
- 1 1/2 cups spinach/kale blend (or your favorite greens)
- 1/2 cucumber, sliced
- 3 strawberries, sliced
- 1 chicken breast, grilled and sliced
- 1 tablespoon feta cheese
- 1 tablespoon crushed pecans
- balsamic vinaigrette (1 tablespoon balsamic vinegar mixed with 2 tablespoons olive oil)
- Wash and prepare all ingredients.
- In a bowl, layer and mix all salad ingredients.
- Top with vinaigrette and serve immediately!
