Happy Monday, folks!
I’ve got some disastrous news: over the weekend, I found out a very unsettling truth–I love iced coffee. I could hear my wallet screaming in agony as I took my first sip of refreshing, caffeinated goodness from Bongo Java across the street, and I was sold. Fortunately, the DIY diva in me wanted to try to make my own, with some fabulous results!
Let’s get to this week’s spread first:
Excuse the poor lighting, but here’s what I whipped up for this week!
Zucchini Noodle Stir Fry. WOW am I happy I made this! Zucchini noodles are great, but they really shine in this recipe. I took 2 spiralized zucchini, 1 thinly sliced red and yellow bell pepper, and about 1/2 thinly sliced yellow onion and put them together in a bowl. In my wok (yes, I have one of those) I heated olive oil and then put in strips of chicken thigh meat (shoutout to Sarah for reccomending this—super delicious and affordable) until they were browned on the outside. I added the rest of the veggies to the wok along with soy sauce, Sriracha, and Trader Joe’s Green Dragon Sauce. LOOK AT THIS BEAUTY. Dinner of dreams for the next few days right here!Sweet Potato Chips. I tried my hand at making sweet potato chips this week too! I used this recipe, which was great except that I don’t have a mandolin slicer or wire rack, so they didn’t really get as crispy as I would have hoped. Still, that seasoning mix is to die for!
Salmon, salmon, salmon. I make mine in a pan with Montreal seasoning. It’s super easy to prepare and then just use as a salad topping throughout the week!
Iced Coffee with Coconut Almond Milk Ice Cubes! I tried to cold brew my own coffee, which ended up being messy when I tried to strain it on my own using normal coffee filters. Definitely think a French press could be a good future investment. However, using unsweetened coconut almond milk to make ice cubes was a BRILLIANT idea and probably the best thing I will accomplish this Monday.Okay guys, that’s it from me!
