I’m starting off this week with a sneaky little confession: I didn’t actually prep any food for this week. Well, at least not for the first half. Last week I was cruising in the Bahamas, and my suitcase is packed yet again for a quick trip to Atlanta. So I hovered on over to one of my favorite photography websites, nabbed this picture, and have now made a full confession of my deceit. Hey, I missed you guys, and I missed writing. What can I say?
While I haven’t prepped any ~legitimate~ food for this week, I can tell you what will be cooking in my kitchen first thing tomorrow, and that’s gotta count for something, right? On we go.
Chicken and Vegetable Stir Fry. A good box of take-out is one of my go-to comfort foods. Honestly, it’s not that difficult to make those same flavors healthy! I’m aiming for a strictly chicken and veggie stir fry (because honestly, you don’t need noodles when you’ve got so much flavor) similar to this one from Cooking Classy. I’m sure this would be fab over rice, quinoa, zucchini noodles, you name it!
Water For Days. This isn’t a recipe so much as it is a general life tip: drinking the right amount of water makes you feel so much better. It was initially a struggle for me to up my water intake, but now that I’ve done it, I feel more awake, alert, and not as hungry throughout the day. I have a huge (50 oz) water bottle that I try and make my way through 3-4 times a day, and when I wasn’t keeping up with it this past week, I really noticed the difference. Seriously. Drink your water. You won’t regret it.
Slow Cooker Blueberry Muffin Oatmeal. I have oatmeal with blueberries for breakfast just about every morning. It’s a tried-and-true favorite, but I’m always up for a little experimentation. This vegan overnight blueberry muffin oatmeal sounds promising…I’ll let you know what I think next week!
Baked Tilapia and Brussels Sprouts. I know that both of those things sound like boring health food, but I’m thinking differently…perhaps with some Cajun seasoning a la this recipe or with some fresh diced garlic and lemon? Listen folks: seasoning is a savior. You can make anything taste delicious if seasoned properly.
Smoky Roasted Sweet Potatoes. I’m always trying to find new ways to enjoy sweet potatoes, and this recipe from Budget Bytes looks pretty dang delicious, right? I’m thinking these would be a great pre-workout snack.
