Sometimes, Mondays come in the form of brand new weeks that you feel absolutely on-top-of. Other days, they come in the form of dazed confusion as you struggle to piece together what exactly you have going on this week…what month is it again? If you can’t tell already, I’m having one of the latter Mondays.

Fortunately, I still had some time to meal prep this week (it’s one of my favorite forms of stress relief!) Here’s four new things I wanted to try that will hopefully bring a little order to this week. What we’ve got going on…


Garlic Zoodles. Most people I know don’t know what a spiralizer is. Even fewer would have danced around in the parking lot when it arrived at their home. But guys! Spiralizers are beautiful things. They basically take veggies and make them into pasta. Pasta? Pasta. All I had to do was turn some zucchini into these long, beautiful ribbons and then sauté them with a little olive oil, minced garlic, salt, and pepper. It tastes like al dente pasta, especially topped with marinara and turkey meatballs! I even wrote an article about all the zoodle recipes I am AMPED to try.

Turkey and Sweet Potato Hash. Definitely made this recipe because it seemed so flexible—it’d totally work for a lunch option but also would be delicious topped with fried eggs for breakfast. Choose your own adventure.

Chicken Burgers. I’m always looking for new ways to eat chicken, so I whipped up these burgers with some seasonings and stuff I had lying around—Sriracha, an egg, scallions, soy sauce, salt and pepper, etc. They ended up being really tender and I’m excited to try them over salad or with some steamed veggies!

Green Applesauce. Green apples are not overly sweet, so they’re perfect for snacking on. I whipped up some applesauce by boiling these until tender, then blending with cinnamon and a splash of lemon juice (you could also mash with a fork if you prefer chunkier applesauce). Easy-peasy and so much healthier than what you’d buy at the store!

Well, my coffee is starting to kick in. Maybe we can do this Monday thing after all. Wishing you a safe and wonderful week!
