Hi all!

So…did you know that you don’t have to fast for Lent on Sundays?



This is MIND BLOWING news to me. I’m not Catholic and didn’t really do this because of religious reasons, but apparently, you’re allowed cheat days (46 days-Sundays-40 days). So, I decided I deserved one, and enjoyed a delicious burger at Josephine, and…felt like a rock was in my stomach this morning. I don’t think it’s possible to develop a gluten allergy over the course of a few weeks, but this morning was a little bit of a struggle. I hope it’s not…definitely not ready to be gluten free for a lifetime (think of the doughnuts!)

Also, another observation: gluten doesn’t always mean healthy. I think that I’ve actually been eating MORE bread (the gluten free deliciousness from Rudi’s) than I did on a normal gluten diet. Sure, I’m not reaching for cookies and pizza when they’re there, but I haven’t been the best about making sure the food I make is healthy (see my gluten free brownie sundae, for example.) I think it’s a balance that everybody, gluten free or not, has to work out in their own lives.


Anyways, here is a delicious and gluten free breakfast that I adore…French Toast. All it took was a slice of gluten free bread, soaked in a blend of one egg, a splash of milk, vanilla and cinnamon. It fried up deliciously and was topped with strawberries, and was literally just as delicious as regular French Toast. Utter perfection. (Note: This was eaten in a paper bowl, because my kitchen is not perfection right now.)

I’m holding (pretty!) strong to this gluten free month. Hopefully I’ll be trying out some new recipes for dinner, since, you know, that’s also a meal.
