Hope you are having a wonderful week so far! I’m proud to report that I’ve made it a full week through my Gluten Free 40 for Lent this year. It started off easy enough, but I do have to say that I have felt the pains of going gluten free…both involving pizza. Seriously, they were giving away FREE PIZZA at my school and it was all I could do not to cry or throw something as I walked past that cheesy, gluten filled deliciousness. However, I did have an INCREDIBLE gluten-free meal at my sorority’s philanthropy event at Loveless Cafe (swapping a cookie for fresh fruit and a warm chocolate fondue!) so it’s been kind of up and down.
I’ve taken this shift-in-diet opportunity to try out some new foods that I probably would have balked at otherwise. I first came into contact with chia seeds when my friend Philip was drinking them in his water. It looked all kinds of strange but he said that you couldn’t taste them and touted their health benefits. During my GF excursion to the grocery store, I saw them and said to myself, why the heck not?
And so we have our little seeds. But instead of drinking them, I made them into pudding! All it took was seeds, milk, honey, cinnamon, and some vanilla extract. Shake that all up in a mason jar with a lid and let it sit overnight. The chia seeds will absorb all of the milk and leave you with something that resembles tapioca pudding. I have to admit that the fact that it was cold wasn’t my favorite, but it definitely would be a great snack or breakfast in the morning with some fresh fruit!
